use almond flour and cashew butter as the base. Cashew butter is another one of my go-to ingredients for baking because it has a mild flavor that’s not as overpowering as other nut butters like peanut or almond.
Plus, cashews are super nutrient-dense and a great addition to a healthy diet! They’re full of unsaturated fat that’s linked to reduced risk of heart disease, and they’re also low in sugar and a great source of plant-based protein.
They’re one of my personal favorite superfoods as they’re SO dang nutrient-dense. Beets provide a good amount of folate, manganese and copper (just to name a few) to help regulate blood pressure, fight inflammation, boost athletic performance, support brain health and more.
Finally, what really makes these bites so tasty is the white chocolate chips.
Mix it all up and roll into balls, and that’s that! You can store the extras in the fridge or freezer before sharing with your Valentine (or save for yourself ).
Ingredients
1 cup almond flour
½ cup runny cashew butter
1 tbsp cacao powder (or unsweetened cocoa powder)
1 tbsp red beet powder (I used the HumanN brand)
¼ cup maple syrup
1 tsp vanilla extract
¼ tsp salt
⅓ cup white chocolate chips (or regular chocolate chips; I used the Lily's Sweets brand)
Directions
1 Add all of the ingredients (besides the chocolate chips) to a mixing bowl. Mix together by hand to create a well-combined dough.
2 Pour in the chocolate chips and mix to incorporate.
3 Use your hands to roll into 12 balls. Store in the fridge or freezer.
